Dad's Fettuccine Alfredo

Ingredients

  • Servings: 5
  • 1 lb fettuccine pasta
  • 1 (8 ounce) carton half-and-half
  • 8 ounces grated parmesan cheese

Recipe

  • 1 cook fettucine (al dente) according to package directions. drain and toss with a little olive oil.
  • 2 in a wok or large pan, heat half and half until barely boiling.
  • 3 slowly add parmesan while whisking.
  • 4 turn off heat and continue to whisk until cheese dissolves.
  • 5 toss in pasta.
  • 6 variation: for fettucine carbonara, add cooked peas and crumbled bacon.
