Dad's Fettuccine Alfredo

Ingredients

- 1 lb fettuccine pasta
- 1 (8 ounce) carton half-and-half
- 8 ounces grated parmesan cheese
Recipe
- 1 cook fettucine (al dente) according to package directions. drain and toss with a little olive oil.
- 2 in a wok or large pan, heat half and half until barely boiling.
- 3 slowly add parmesan while whisking.
- 4 turn off heat and continue to whisk until cheese dissolves.
- 5 toss in pasta.
- 6 variation: for fettucine carbonara, add cooked peas and crumbled bacon.
