Creamy Bean Soup

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 (16 ounce) cans drained cannellini beans
  • 1 (14 ounce) can vegetable broth
  • 1/2 cup milk
  • 2 large egg yolks
  • 1/2 cup freshly grated parmesan cheese
  • 1/8 teaspoon black pepper

Recipe

  • 1 in a food processor combine beans and 1/4 cup broth.
  • 2 in a saucepan, heat remaining broth to a simmer over medium heat.
  • 3 whisk in bean puree.
  • 4 return to simmer.
  • 5 in a bowl, mix milk and yolks.
  • 6 whisk in 1 cup of puree into milk stir until smooth.
  • 7 pour milk/puree into the saucepan.
  • 8 cook until hot, about 3 minutes, do not let boil.
  • 9 stir in cheese and pepper.
