Bean Cheese Herb Muffins

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 2 cups black-eyed peas
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon flax seed meal
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mixed italian herbs
  • 1/2 cup cheddar cheese, shredded
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon pepper

Recipe

  • 1 beat on high eggs and beans til mostly smooth
  • 2 add in rest except cheese, blend.
  • 3 stir in cheese.
  • 4 put into 8 muffins cups.
  • 5 bake 350 for about 20-25 minutes.
  • 6 until knife comes out clean.
