Chris & Cheryl's Mega Spaghetti Sauce

Ingredients

  • Servings: 20
  • 10 lbs lean ground beef
  • 3 lbs italian sausage (casings removed)
  • 2 tablespoons olive oil
  • 4 onions (chopped)
  • 4 celery ribs (diced)
  • 9 garlic cloves (minced)
  • 2 green peppers (diced)
  • 2 tablespoons olive oil
  • 112 ounces tomato sauce (4 - 28oz cans)
  • 112 ounces diced tomatoes (4 - 28oz cans)
  • 112 ounces crushed tomatoes (4 - 28oz cans)
  • 10 ounces tomato paste (2 - 5oz cans)
  • 1 cup red wine
  • 2 tablespoons italian seasoning
  • 2 tablespoons oregano
  • 2 tablespoons basil
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 1 tablespoon crushed red pepper flakes
  • 2 tablespoons brown sugar
  • 4 bay leaves

Recipe

  • 1 chop all vegetables in small pieces, put aside.
  • 2 in skillet, brown meat (beef and sausages) , remove excess fat, put aside.
  • 3 fry onions until tender add garlic and cook for 1 more minute, put aside.
  • 4 fry rest of vegetables.
  • 5 put meat, onions and vegetables in large pot.
  • 6 add tomato sauce, tomatoes, tomatoe paste, wine, spices and simmer from 2 to 3 hours stirring occasionnaly and until sauce thikens.
