Cheesy Pasta Bake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 2 roma tomatoes, diced
  • 1/4 onion, chopped
  • 3 garlic cloves, chopped
  • 1 (16 ounce) can tomato sauce
  • 1 1/2 teaspoons oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon thyme
  • 1 (16 ounce) bag rotini noodles
  • 4 tablespoons parmesan cheese, grated
  • 1/4 cup water
  • 1 -2 cup shredded cheddar cheese (or whatever cheese you prefer or have on hand)

Recipe

  • 1 chop up the tomatoes, onion and garlic, put them in a small sauce pan and saute until onion and garlic are translucent. add in the tomato sauce, as it starts to boil use a potato masher and mash up the tomato's a little more. add the remaining sauce ingredients, and allow sauce to simmer for about 15 minutes. this can be done ahead of time.
  • 2 cook the noodles according the directions on the package. once done drain and put them back in the pot.
  • 3 pour the sauce onto the noodles and stir. then add in the parmesan cheese and combine.
  • 4 preheat the oven to 350 degrees.
  • 5 pour the mixture into a slightly greased 8x8 pan. pour 1/4 cup water down over the noodles. top with the cheddar cheese, and cook for about 15-20 minutes or until cheese is melted and bubbly.
  • 6 let it cool a minute before serving.
