Chili With Cocoa And Salsa

Total Time: 2 hrs 45 mins Preparation Time: 15 mins Cook Time: 2 hrs 30 mins

Ingredients

  • 1 lb hot italian sausage or 1 lb sweet italian sausage
  • 1 1/2 lbs lean ground beef
  • 2 tablespoons olive oil
  • 3 onions, chopped
  • 6 garlic cloves, mashed
  • 3 fresh jalapeno peppers, seeded and chopped or 2 tablespoons pickled jalapeno peppers, drained and chopped
  • 2 teaspoons salt
  • 1 tablespoon ground cumin
  • 4 tablespoons chili powder
  • 1 tablespoon dried oregano
  • 1 (28 ounce) can crushed tomatoes in puree
  • 1/2 cup salsa
  • 2 tablespoons cocoa
  • 28 ounces canned red kidney beans, drained

Recipe

  • 1 slice sausages into about 6 pieces each, place in 6-quart stockpot or dutch oven and sauté until well browned.
  • 2 remove to a mixing bowl and add ground beef to pot and brown.
  • 3 remove to mixing bowl.
  • 4 drain fat from pot and add olive oil.
  • 5 add onions and cook over medium-low heat until they are translucent.
  • 6 add garlic and cook another minute or two, or until the garlic is fragrant.
  • 7 return sausage and ground meat to pot.
  • 8 add jalapenos, salt, cumin, chili powder, oregano, tomatoes, salsa and cocoa.
  • 9 cover and simmer for 2 hours.
  • 10 adjust seasoning to taste.
  • 11 add kidney beans, cover again and cook 30 minutes.
