Creamy Mushroom Sauce For Pasta

Ingredients

- 1/2 ounce butter
- 4 spring onions, chopped
- 8 ounces mushrooms, sliced
- 1 cup chicken stock
- 2 cups double cream
- pepper, freshly ground
- parmesan cheese, for sprinkling
Recipe
- 1 melt butter in a frying pan over medium heat. add onions and mushrooms and cook while stirring until mushrooms are soft, about 4 minutes.
- 2 stir in stock, cream and black pepper to taste, bring to a gentle boil and simmer for 6 to 8 minutes or until sauce reduces and thickens slightly.
- 3 toss with your choice of pasta, sprinkle with parmesan cheese and serve.
