Chicken And Zucchini Couscous

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 8 ounces boneless skinless chicken breasts, cut into 1-inch cubes
  • 4 medium zucchini, sliced
  • 1 (14 1/2 ounce) can diced tomatoes
  • 14 1/2 ounces reduced-sodium fat-free chicken broth
  • 1 teaspoon italian seasoning
  • 1 cup uncooked whole wheat couscous

Recipe

  • 1 spray a large deep skillet with cooking spray; heat over medium-high heat. cook and stir chicken 4 minutes or until lightly browned.
  • 2 add zucchini, tomatoes, broth and seasoning. simmer uncovered, 15 minutes, stirring occasionally.
  • 3 stir in couscous; remove from heat. cover let stand 7 minutes. fluff with fork before serving.
