Chicken Marsala

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves
  • 1 large egg, lightly beaten
  • 1/4 cup soy flour or 1/4 cup oat flour
  • 2 tablespoons butter, melted
  • 2 cups fresh mushrooms, sliced
  • 1 cup marsala, more to taste
  • 1 cup heavy cream
  • sliced mozzarella cheese
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup red wine (i use merlot)

Recipe

  • 1 dip chicken in egg, and dredge in flour.
  • 2 brown chicken in butter in a large skillet over medium-high heat.
  • 3 remove chicken and set aside.
  • 4 reserve drippings in skillet.
  • 5 cook mushrooms in drippings in the skillet over medium-high heat, stirring constantly, until tender.
  • 6 add chicken, marsala, and remaining ingredients and top chicken pieces with the cheese.
  • 7 cook until heated through and cheese is melted.
