Chicken Marsala

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 4 (4 ounce) boneless skinless chicken breasts
  • 3 garlic cloves, minced
  • 1/2 cup sliced fresh mushroom
  • 3 tablespoons marsala wine
  • 1 cup chopped tomato with juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon mixed italian herbs
  • 1/4 teaspoon black pepper

Recipe

  • 1 place olive oil in skillet set to medium-high heat. cook chicken breasts 2-3 minutes on each side or until each side is golden brown. while chicken breasts continue to cook, add garlic and mushrooms. cook another minute. add marsala. when marsala begins to boil, add tomatoes. stir all ingredients together and lower heat. add spices. cover skillet, reduce heat to medium-low and cook another 15-20 minutes or until chicken registers 165°f on instant read thermometer.
  • 2 serve over brown rice or couscous.
