Chicken Italiano Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 2 lbs boneless skinless chicken breasts, cubed
  • 2 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup fresh basil, finely chopped or 1/4 cup pesto sauce
  • 1 teaspoon dried oregano
  • 2 cups marinara sauce or 2 cups pasta sauce
  • 1 1/2 cups reduced-fat mozzarella cheese, shredded
  • 2 ounces grated parmesan cheese
  • 1 cup garlic-flavored croutons, roughly crushed leaving some larger pieces

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 lightly spray a 9 x 13 baking dish with cooking spray.
  • 3 place the chicken in the bottom of the dish in a single layer.
  • 4 sprinkle the minced garlic, red pepper flakes, basil/pesto and oregano evenly over the chicken.
  • 5 spread the sauce evenly across the top.
  • 6 on top of the sauce, sprinkle 1/2 of the mozzarella and 1/2 of the parmesan evenly across the dish.
  • 7 sprinkle the crushed croutons across the top and follow with the rest of the cheese.
  • 8 bake for 40-45 minutes. let stand for 5 minutes before serving.
