Breakfast Hush Hash

Ingredients

- 4 cups hash brown potatoes
- 8 slices bacon
- 4 eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 avocados
- 1/2 onion
- 1/3 cup cooking oil
Recipe
- 1 cook the bacon until it is crisp, let it cool and shred into little pieces, then place the simply potatoes hash browns in a bowl and add the bacon bits + salt and pepper to taste. mix together and scoop up some of the mixture and pad it together as to make flat patties. in a skillet eat the oil and add the potatoes patties and cook until golden brown (do not turn too many times and let the potatoes brown on one side before turning).
- 2 in another bowl mash the avocado and add some of the onion you have cut in very small pieces, salt and pepper to taste.
- 3 on a serving plate place the cooked potato patties and to each one add a bit of the avocado mixture. cook the eggs sunny side up and place them on top of the potatoes and avocados. serve immediately.
