Brandy Peppercorn Sauce For Beef

Ingredients

  • Servings: 1
  • 1 tablespoon peppercorn
  • 1 tablespoon red onion
  • 2 tablespoons butter
  • 1 cup brandy
  • 4 tablespoons demi-glace
  • 2 tablespoons heavy cream
  • salt and pepper

Recipe

  • 1 in a small sautee pan add onions, peppercorns and butter. sautee until somewhat soft.
  • 2 add 1/2 cup of brandy and reduce until its almost gone. it will catch fire!
  • 3 add the rest of the brandy, demi-glace, cream, and reduce until thick enough to pour over steak, salt to taste.
  • 4 best with filet!
