Cherry-balsamic Glazed Chicken Breasts

Ingredients

- 1 tablespoon olive oil
- 3 tablespoons minced shallots
- 3/4 cup cherry preserves
- 1/4 cup balsamic vinegar
- 1/4 teaspoon italian spices
- 1/8 teaspoon ground pepper
- 6 boneless chicken breasts
- 1/2 teaspoon salt
Recipe
- 1 preheat grill.
- 2 in a medium saucepan, heat the olive oil over medium heat until hot.
- 3 add the shallots and saute until softened- about 3-4 minutes.
- 4 add the cherry preserves, balsamic vinegar, italian seasonings, and the pepper.
- 5 reduce heat to medium low and cook until the mixture is reduced by one-fourth.
- 6 about 6-8 minutes.
- 7 reserve 6 tbsp of glaze in small bowl.
- 8 lightly season chicken breasts with salt.
- 9 place chicken on grill.
- 10 cook, covered for 4 minutes per side.
