Burgundy Chicken

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1/4 cup olive oil
  • 1 small whole chicken, cut up
  • flour (for dredging)
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1/4 cup burgundy wine
  • 1 cup chicken broth
  • salt and pepper

Recipe

  • 1 pre-heat oven to 350 degrees.
  • 2 heat olive oil in skillet over medium heat.
  • 3 dredge chicken pieces in flour.
  • 4 when oil is hot brown chicken on all sides.
  • 5 place chicken in oven proof pan.
  • 6 bake chicken for 45 minutes to 1 hour.
  • 7 heat butter in a clean skillet and add garlic.
  • 8 cook until light tan in color.
  • 9 add cooked chicken to skillet with garlic.
  • 10 add chicken broth, wine and salt and pepper to taste.
  • 11 cook until liquid is reduced to the consistancy of a sauce. (about 10 mnts.).
  • 12 serve.
