Dinosaur Bbq Mojito Chicken

Ingredients

  • 1/4 cup chopped garlic
  • 1 tablespoon ground black pepper
  • 1/2 cup onion, chopped
  • 2 teaspoons cumin
  • 2 cups fresh orange juice
  • 2 teaspoons dried oregano
  • 1/2 cup fresh lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 cup olive oil
  • 8 pieces chicken
  • 1 large onion, sliced into 1/2-inch rounds
  • 2 tablespoons fresh italian parsley, chopped

  • 1 to make the marinade:.
  • 2 mix the garlic, onions, orange and lime juices in a bowl.
  • 3 heat the olive oil in a large saucepan until just smoking.
