Chicken And Rotini Primavera

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 ounces rotini pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, cubed
  • 1 lb frozen mixed vegetables, thawed
  • 4 ounces light cream cheese
  • 1/2 cup light italian dressing
  • 1/2 cup skim milk
  • garlic powder (optional)

Recipe

  • 1 cook pasta according to package directions and drain.
  • 2 heat oil in heavy skillet over medium-high heat. add chicken and sprinkle with a few shakes of garlic powder and cook until no longer pink.
  • 3 combine cream cheese, dressing and milk in separate small sauce pan. heat on low to medium-low and whisk until smooth.
  • 4 add cream cheese mixture to chicken and vegetables. stir well and heat through (about 5 minutes). serve over pasta.
