Chicken Scallopini With Lemon Herb Sauce

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 teaspoons italian seasoning
  • 4 chicken breasts, boneless, skinless
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon lemon zest
  • 1/3 cup chicken stock
  • 2 tablespoons lemon juice

Recipe

  • 1 sprinkle herb seasoning over chicken.
  • 2 place chicken breasts between 2 sheets of wax paper and pound lightly with a mallet to flatten.
  • 3 dredge chicken in flour, shaking off excess.
  • 4 heat a nonstick skillet over medium high heat. add oil and half the butter.
  • 5 when hot, saute' chicken, in batches if necessary, 1-2 minutes per side, until browned. transfer to serving dish.
  • 6 sprinkle with lemon zest and salt and pepper to taste. set aside and keep warm.
  • 7 add 2 teaspoons remaining flour to skillet and cook about 1 minute, stirring constantly until smooth.
  • 8 whisk in chicken stock and lemon juice.
  • 9 bring to a boil and simmer 2 minutes, stirring constantly until sauce begins to thicken.
  • 10 remove from heat. stir in remaining butter until incorporated.
  • 11 serve sauce over chicken.
