Chicken Scallopini With Lemon Herb Sauce

Ingredients

- 2 teaspoons italian seasoning
- 4 chicken breasts, boneless, skinless
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 teaspoon lemon zest
- 1/3 cup chicken stock
- 2 tablespoons lemon juice
Recipe
- 1 sprinkle herb seasoning over chicken.
- 2 place chicken breasts between 2 sheets of wax paper and pound lightly with a mallet to flatten.
- 3 dredge chicken in flour, shaking off excess.
- 4 heat a nonstick skillet over medium high heat. add oil and half the butter.
- 5 when hot, saute' chicken, in batches if necessary, 1-2 minutes per side, until browned. transfer to serving dish.
- 6 sprinkle with lemon zest and salt and pepper to taste. set aside and keep warm.
- 7 add 2 teaspoons remaining flour to skillet and cook about 1 minute, stirring constantly until smooth.
- 8 whisk in chicken stock and lemon juice.
- 9 bring to a boil and simmer 2 minutes, stirring constantly until sauce begins to thicken.
- 10 remove from heat. stir in remaining butter until incorporated.
- 11 serve sauce over chicken.
