Chop Salad

Ingredients

  • Servings: 4
  • 1 tablespoon dijon mustard
  • 2 tablespoons wine vinegar
  • 1 tablespoon apple cider vinegar
  • 6 tablespoons olive oil
  • salt and pepper
  • 1 red bell pepper
  • 1 red onion
  • 6 medium tomatoes
  • 1/2 english cucumber
  • 2 heads romaine lettuce
  • 1 radicchio
  • 1 cup italian parsley
  • 1 cup basil
  • 1 cup mint
  • 6 ounces feta

Recipe

  • 1 prepare the dressing by mixing until combined mustard, olive oil, both vinegars and add salt and pepper to taste.
  • 2 on large cutting board chop all the veggies into small ½ inch size pieces combining as you chop each item.
  • 3 slowly add dressing to vegetables and mix until the taste is perfect.
