Besciamella Sauce

Ingredients
- 1 cup milk
- 1 cup chicken broth
- 4 tablespoons butter
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon nutmeg
- 1/8 teaspoon dried thyme
Recipe
- 1 in a small saucepan, combine milk and chicken broth; bring just to a simmer over medium-low heat; keep warm.
- 2 in a heavy medium saucepan, melt butter over low heat.
- 3 add flour and cook, stirring 2-3 minutes without allowing flour to brown.
- 4 remove from heat and whisk in hot milk and stock.
- 5 return to low heat and cook, whisking occasionally, 4-5 minutes, until sauce is medium thick.
- 6 season with salt, pepper, nutmeg and thyme.
