Country Dijon Sausage Pie

Ingredients

- 1 lb italian sausage, sweet
- 1 medium onion, chopped
- 2 medium garlic cloves, crushed
- 10 ounces fresh spinach
- 1/4 teaspoon oregano
- 5 eggs, beaten slightly
- 1/2 cup country-style dijon mustard
- 2 (9 inch) pie crusts, prepared
- 1/4 cup parmesan cheese, grated
Recipe
- 1 in large skillet, cook sausage, onion and garlic until sausage is crumbly.
- 2 drain, reserving 1 tablespoon drippings.
