- 2 cups chopped onions
- 1 cup quinoa, rinsed
- 1 tablespoon dried italian seasoning
- 1 (28 ounce) can diced tomatoes with juice
- 8 cups vegetable broth or 8 cups chicken broth
- salt and pepper
Recipe
- 1 in a large pot combine all ingredients. bring to a boil over medium high heat. reduce heat to low and simmer, until vegetables and quinoa are tender.
