Buffalo Chicken Skewers With Blue Cheese Dipping Sauce

Ingredients

- 6 tablespoons butter
- 1/4-1/3 cup hot pepper sauce (like louisiana or franks not tabasco)
- 1 1/2 tablespoons cider vinegar
- 1 italian salad dressing mix (good seasons .6 ounce dry packet)
- 1 lb chicken tenders, rinsed and patted dry
- 2 tablespoons vegetable oil
- salt and pepper, to taste
- wooden skewer (soaked in water for 30 minutes to avoid burning)
- 1/2 cup blue cheese dressing
Recipe
- 1 combine butter, hot sauce, cider vinegar and dressing mix in heavy saucepan. stir over low heat until smooth. taste and add more hot sauce if desired.
- 2 spray grill or broiler pan with no-stick cooking spray; heat grill or broiler.
- 3 place chicken tenders in large bowl; drizzle with oil. toss to coat. season with salt and pepper. thread each chicken tender onto a wooden skewer.
- 4 grill or broil until cooked through and golden brown, about 8 to 10 minutes. brush generously with buffalo sauce in the last minutes of cooking. serve with blue cheese dressing for dipping.
