Delicious Oven-roasted Potatoes

Ingredients

- 8 medium russet potatoes, halved and quartered
- 1/2 cup italian dressing, if desired (not fat-free, bottled or homemade, (or more)
- 3 -4 tablespoons olive oil
- 1 tablespoon minced fresh garlic (optional)
- 1/2 cup grated parmesan cheese (or to taste)
- salt and black pepper
Recipe
- 1 set oven to 400 degrees (preferably convection bake).
- 2 line a cookie sheet or baking pan with foil that has been well sprayed with cooking spray.
- 3 dry the potatoes pieces well with a paper towel to remove any excess moisture.
- 4 in a large bowl, combine the italian salad dressing, olive oil and the minced garlic, mix well.
- 5 toss the potatoes in the mixture to coat well.
- 6 transfer the potatoes onto a greased cookie sheet.
- 7 season with salt and pepper and the grated parmesan cheese.
- 8 bake in oven for 30-35 minutes.
- 9 turning occasionally to brown evenly and to prevent sticking.
- 10 test with fork, as potatoes might be done before 30 minutes (cooking time will vary depending on the size of your potatoes).
- 11 remove from oven.
- 12 season with additional parmesan cheese 3-5 minutes before serving.
