Crock-pot Minestrone Soup

Ingredients

  • 1/2 cup lentils
  • 1/2 cup pearl barley
  • 1/2 cup black-eyed peas
  • 1 quart beef broth
  • 1 quart water
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 1 medium zucchini, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 (4 ounce) can mushrooms, drained
  • 2 tablespoons italian seasoning
  • 2 tablespoons garlic, minced
  • 4 bay leaves
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon crushed red pepper flakes

Recipe

  • 1 combine beans, broth, and water in a large crockpot and cook on high for 4-5 hours or until beans are tender.
  • 2 add remaining ingredients and cook on low for 4 to 5 hours or until vegetables are tender.
  • 3 yummy topped with grated parmesan cheese.
