Crock-pot Minestrone Soup

Ingredients
- 1/2 cup lentils
- 1/2 cup pearl barley
- 1/2 cup black-eyed peas
- 1 quart beef broth
- 1 quart water
- 2 (14 1/2 ounce) cans diced tomatoes, undrained
- 1 medium zucchini, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 (4 ounce) can mushrooms, drained
- 2 tablespoons italian seasoning
- 2 tablespoons garlic, minced
- 4 bay leaves
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon crushed red pepper flakes
Recipe
- 1 combine beans, broth, and water in a large crockpot and cook on high for 4-5 hours or until beans are tender.
- 2 add remaining ingredients and cook on low for 4 to 5 hours or until vegetables are tender.
- 3 yummy topped with grated parmesan cheese.
