Chicken Puttanesca-style

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 1/2-3 lbs chicken pieces
  • 1 medium onion, sliced
  • 1/4 cup balsamic vinegar
  • 1 (26 ounce) jar pasta sauce, ragu old world style (1lb. 10oz. jar)
  • 1 cup black olives, sliced
  • 1 tablespoon capers, drained
  • 1/4 teaspoon red pepper flakes (or a few dashes of tabasco sauce)
  • salt, to taste
  • black pepper
  • 1 tablespoon fresh parsley, chopped

Recipe

  • 1 in a skillet heat olive oil over med-high heat and brown chicken, remove chicken and set aside.
  • 2 in same skillet add onion, vinegar and cook over medium heat, stirring occasionally, for 3 minutes. stir in pasta sauce, salt, and pepper return chicken to skillet and simmer covered for 25 minutes or until chicken is thoroughly cooked. stir in olives and capers, heat through.
  • 3 sprinkle with parsley and serve over hot pasta or rice.
