Creamy Tuscan Tomato Pasta With Chicken

Ingredients

- 1 tablespoon olive oil
- 1 cup chopped onion
- 3 garlic cloves
- 1 whole boneless skinless chicken breast
- 250 g fusilli
- 4 -6 sun-dried tomatoes
- 1/2 cup dry wine
- 2 tablespoons lemon juice
- 14 ounces diced tomatoes
- 1 tablespoon italian seasoning
- 1/3 cup black olives
- 1 -2 teaspoon dried chili pepper flakes
- salt and pepper
- 1 cup light cream
Recipe
- 1 cook pasta according to package instructions.
- 2 chop chicken into bite sized pieces.
- 3 brown chicken in oil in a deep frying pan, set aside and keep warm.
- 4 fry onion and garlic in oil until soft and fragrant.
- 5 chop semi-dried tomatoes and olives into small pieces, add to onion and garlic.
- 6 add can of tomatoes, lemon juice and wine.
- 7 mix in dried italian spices, salt and pepper and chili flakes.
- 8 when pasta is done add to tomato sauce with the chicken.
- 9 stir in cream and warm through, do not boil.
