Creamy Tuscan Tomato Pasta With Chicken

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 3 garlic cloves
  • 1 whole boneless skinless chicken breast
  • 250 g fusilli
  • 4 -6 sun-dried tomatoes
  • 1/2 cup dry wine
  • 2 tablespoons lemon juice
  • 14 ounces diced tomatoes
  • 1 tablespoon italian seasoning
  • 1/3 cup black olives
  • 1 -2 teaspoon dried chili pepper flakes
  • salt and pepper
  • 1 cup light cream

Recipe

  • 1 cook pasta according to package instructions.
  • 2 chop chicken into bite sized pieces.
  • 3 brown chicken in oil in a deep frying pan, set aside and keep warm.
  • 4 fry onion and garlic in oil until soft and fragrant.
  • 5 chop semi-dried tomatoes and olives into small pieces, add to onion and garlic.
  • 6 add can of tomatoes, lemon juice and wine.
