Cheesy Summer Pasta

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/2 lb fettuccine or 1/2 lb linguine
  • 2 medium zucchini, cut in narrow strips
  • 3 garlic cloves, minced
  • 2 cups shredded italian cheese blend, italian blend (such as kraft 4-cheese italiano or sargento 6-cheese italian)
  • 4 tomatoes, coarsely chopped
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon dried basil

Recipe

  • 1 cook pasta, adding zucchini during last 2 minutes of cooking. drain and return to saucepan.
  • 2 add tomatoes, garlic, parsley and basil to pasta.
  • 3 add 1 1/2 cups cheese and mix until melted.
  • 4 garnish with remaining cheese. serve immediately.
