Baked Macaroni & 3 Cheese (light)

Ingredients
- Servings: 6
- 2 tablespoons light margarine
- 1/4 cup flour
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon pepper
- 1 1/2 cups skim milk
- 1 cup low-fat monterey jack and colby cheese, grated (or similar)
- 1/2 cup reduced-fat italian cheese blend, grated (or similar)
- 1/2 cup velveeta cheese, cubed
- 8 ounces macaroni, cooked according to package directions
Recipe
- 1 in bowl, mix flour, salt, mustard, pepper and milk until smooth.
- 2 melt butter in large saucepan.
- 3 remove from heat and gradually stir in milk mixture until smooth.
- 4 stirring constantly, cook over medium heat until thickened (about 10 minutes).
- 5 remove from heat.
- 6 stir in cheeses until melted.
- 7 combine cheese mixture with macaroni in greased 2 quart casserole.
- 8 bake in 375 degree oven for 25 minutes or until lightly browned.
