Baked Macaroni & 3 Cheese (light)

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons light margarine
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1 1/2 cups skim milk
  • 1 cup low-fat monterey jack and colby cheese, grated (or similar)
  • 1/2 cup reduced-fat italian cheese blend, grated (or similar)
  • 1/2 cup velveeta cheese, cubed
  • 8 ounces macaroni, cooked according to package directions

Recipe

  • 1 in bowl, mix flour, salt, mustard, pepper and milk until smooth.
  • 2 melt butter in large saucepan.
  • 3 remove from heat and gradually stir in milk mixture until smooth.
  • 4 stirring constantly, cook over medium heat until thickened (about 10 minutes).
  • 5 remove from heat.
  • 6 stir in cheeses until melted.
  • 7 combine cheese mixture with macaroni in greased 2 quart casserole.
  • 8 bake in 375 degree oven for 25 minutes or until lightly browned.
