Baked Ziti Our Way

Ingredients
- Servings: 8
- 1 lb chicken sausage (sub sweet or hot italian sausage)
- 1 onion, diced
- 3 -4 garlic cloves, minced
- 1 tablespoon olive oil
- 28 ounces diced tomatoes
- 28 ounces crushed tomatoes
- 6 ounces tomato paste (i have left this out before it's fine)
- 4 ounces sliced mushrooms
- 1/2 cup chicken broth
- 1/2 cup wine
- basil
- oregano
- salt
- garlic powder
- fennel seed (optional)
- 1 1/2 cups small curd cottage cheese
- 8 ounces mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 lb penne, cooked al dente (should be a little undercooked)
Recipe
- 1 saute onion, garlic and sausage in olive oil until sausage is browned. drain if you have lots of grease (i don't because of the chicken).
- 2 add tomatoes, shrooms, wine, chicken broth, herbs and spices to taste.
- 3 simmer for about an hour (or as long as you want).
- 4 stir in pasta, cottage cheese, 1 cup mozzarella, 1/2 cup parmesan.
- 5 pour into a large greased baking dish and top with mozzarella and parmesan.
- 6 bake at 350 for about 30 mins, broil for the last few to really brown the cheeses and get that crust.
- 7 let sit 10 minutes before serving.
- 8 *this freezes well if you freeze before baking.
