Baked Ziti Our Way

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 1 lb chicken sausage (sub sweet or hot italian sausage)
  • 1 onion, diced
  • 3 -4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 28 ounces diced tomatoes
  • 28 ounces crushed tomatoes
  • 6 ounces tomato paste (i have left this out before it's fine)
  • 4 ounces sliced mushrooms
  • 1/2 cup chicken broth
  • 1/2 cup wine
  • basil
  • oregano
  • salt
  • garlic powder
  • fennel seed (optional)
  • 1 1/2 cups small curd cottage cheese
  • 8 ounces mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 lb penne, cooked al dente (should be a little undercooked)

Recipe

  • 1 saute onion, garlic and sausage in olive oil until sausage is browned. drain if you have lots of grease (i don't because of the chicken).
  • 2 add tomatoes, shrooms, wine, chicken broth, herbs and spices to taste.
  • 3 simmer for about an hour (or as long as you want).
  • 4 stir in pasta, cottage cheese, 1 cup mozzarella, 1/2 cup parmesan.
  • 5 pour into a large greased baking dish and top with mozzarella and parmesan.
  • 6 bake at 350 for about 30 mins, broil for the last few to really brown the cheeses and get that crust.
  • 7 let sit 10 minutes before serving.
  • 8 *this freezes well if you freeze before baking.
