Ingredients

- 2 eggs
- 2 tablespoons tomato puree
- 2 tablespoons olive oil
- 1 pinch salt and pepper
Recipe
- 1 use one little earthenware pan for each person.
- 2 put into pan 2 tbs olive oil and 2 tbs tomato puree and let cook until tomato appears almost dry.
- 3 add eggs, scramble with tomato and cook until is done.
- 4 add salt and pepper and serve hot with your preferred bread aside.
- 5 choice of good tomato puree is very important. canned tomatoes or fresh, ripe tomatoes may also be used. pepper should be freshly ground.
