Chicken Cacciatore

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 12 ounces linguine
  • 1/4 cup olive oil
  • 6 boneless skinless chicken breasts
  • 2 yellow onions, peeled crushed
  • 1 (1 lb) can tomato
  • 3/4 cup dry red wine
  • 1/4 cup tomato paste
  • 1/2 teaspoon rosemary
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 heat oil in large pot over high heat.
  • 2 cook chicken, remove from pot.
  • 3 cook onions 5 minutes.
  • 4 add garlic, cook 4 minutes.
  • 5 add tomatoes, break clumps.
  • 6 mix wine, tomato paste & rosemary, add to pot.
  • 7 return chicken to pot.
  • 8 add salt & pepper, simmer 45 minutes.
  • 9 cook liguine accordingly while sauce simmers.
  • 10 toss with sauce and chicken with linguine, serve.
