Chicken Cacciatore

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter or 2 tablespoons margarine
  • 4 boneless chicken breasts, cut in half
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (14 1/2 ounce) can undrained stewed tomatoes, chopped
  • 1/4 cup chicken broth
  • 1 1/2 teaspoons italian seasoning
  • 1/2 lb spaghetti

Recipe

  • 1 heat butter in skillet over medium high heat.
  • 2 add chicken.
  • 3 saute' 3 minutes on each side.
  • 4 remove chicken.
  • 5 drain all but 2-3 tbs of drippings.
  • 6 add garlic, onion, and bell pepper to skillet.
  • 7 saute' until tender, about 4 minutes.
  • 8 add undrained tomatoes, broth, and italian seasoning.
  • 9 return chicken to skillet.
  • 10 cover and simmer for 25 minutes, or until chicken is tender.
  • 11 bring large pot of water to a boil.
  • 12 cook pasta according to directions and drain well.
  • 13 place pasta in large serving bowl and spoon sauce and chicken over top.
  • 14 serve.
