Chargrilled New Potato Skewers

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs unpeeled new potatoes
  • 3 tablespoons olive oil
  • salt
  • black pepper
  • 4 (10 inch) presoaked bamboo skewers

Recipe

  • 1 cook potatoes in boiling salted water until just tender, 15 minutes.
  • 2 cut in half and toss with oil, salt and pepper.
  • 3 thread potato halves on to skewers.
  • 4 if grilling outdoors on the barbeque over medium coals, turning regularly, until lightly charred, about 10 minutes. serve hot.
