Easy Clam Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 (14 ounce) can italian peeled tomatoes, drained and chopped
  • 2 cups water
  • 1 cup bottled clam juice
  • 2 large red potatoes, peeled and cut in 1 inch cubes
  • 1 teaspoon dried oregano
  • 2 (6 1/2 ounce) cans chopped clams
  • 1 pinch cayenne

Recipe

  • 1 in saucepan, heat oil over medium heat. sauté onion and garlic until softened.
  • 2 add tomatoes, water and clam juice. bring to a boil.
  • 3 add potatoes and oregano. cover and cook 20 minutes or until potatoes are tender.
  • 4 add clams and heat through, about 1 minute. season to taste with cayenne.
