Chicken Parmesan Sandwich

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breast halves (approximately 4-5 ounces each)
  • salt and pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 3/4 cup seasoned bread crumbs
  • 3 tablespoons grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 slices provolone cheese
  • 2 italian rolls, ciabiatta or 2 french rolls, split lengthwise
  • 1/3 cup marinara sauce or 1/3 cup meatless spaghetti sauce, warmed

Recipe

  • 1 flatten chicken to 1/2-in. thickness; sprinkle both sides with garlic powder, oregano and season to taste with salt and pepper.
  • 2 place flour and egg in separate shallow bowls. in another bowl, combine bread crumbs and parmesan cheese. dip chicken in flour, then egg; roll in crumb mixture.
  • 3 in a large skillet, heat oil. cook chicken over medium heat for 4-5 minutes on each side or until juices run clear. layer chicken and cheese on bun bottoms; spread with marinara sauce. replace tops.
