Chicken Cacciatore

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 large broiler-fryer chicken, cut up
  • 4 tablespoons olive oil
  • 1/8 cup butter
  • salt & pepper
  • 1 tablespoon parsley flakes
  • 3 large onions, chopped
  • 3 stalks celery, stems chopped
  • 1 garlic clove, chopped
  • 1 (6 ounce) can tomato paste

Recipe

  • 1 cut up chicken, wash & dry.
  • 2 heat oil & butter until bubbly.
  • 3 add chicken & cook slowly till golden brown.
  • 4 remove & set aside.
  • 5 add all chopped ingredients, let cook slowly, stirring as not to burn.
  • 6 when slightly brown, add tomato paste & two cans water.
  • 7 add parsley.
  • 8 replace chicken in gravy & cook till tender over low heat about an hour.
  • 9 serve with rice.
