Chicken Cacciatore

Ingredients
- Servings: 4
- 1 onion
- 3 cloves garlic, minced
- 2 lbs chicken thighs, boneless & skinless
- olive oil, 4 tbs
- 34 ounces crushed tomatoes, in juice
- 2 bell peppers, seeds removed and sliced (color of your choice)
- 1 (10 ounce) package fresh mushrooms, halved
- salt and pepper
- 1 lb pasta or 1 lb spaghetti or 1 lb ziti pasta
Recipe
- 1 heat oil in saute pan.
- 2 add onion and garlic, cook until tender.
- 3 add chicken and brown.
- 4 add can of tomatoes, peppers and mushrooms.
- 5 add salt and pepper to taste.
- 6 cover and simmer for one to two hours.
- 7 serve over cooked pasta.
