Chicken Cacciatore

Ingredients

- 4 boneless chicken breast halves
- 1/4 cup flour
- 1 medium onion, chopped fine
- 2 cloves garlic, chopped fine
- 1 (4 ounce) can mushroom pieces
- 1 (14 1/2 ounce) can plum tomatoes
- 1/2 teaspoon basil
- 1/4 cup tomato paste
- 1/2 teaspoon dry oregano
- 1/4 cup red wine
- 1/2 teaspoon thyme
- 1/4 teaspoon crushed red pepper
- 1 bay leaf
- salt and pepper
Recipe
- 1 dredge chicken in seasoned flour.
- 2 saute 5 min per side in 2 t oil (i make this in my wok).
- 3 set chicken aside and cook onion and garlic 5 min.
- 4 deglaze pan with wine.
- 5 add tomatoes, mushrooms, spices.
- 6 mix well.
- 7 add chicken and simmer covered 45 min.
- 8 serve over pasta.
- 9 sauce freezes well.
- 10 you can also make this with lamb chops or veal.
