Easy Roasted Red Pepper Dip

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 2 red bell peppers, roasted and quartered
  • 1/4 cup mayonnaise
  • 2 tablespoons italian parsley
  • 1 anchovy fillet
  • 1 garlic clove, coarsely chopped
  • 2 tablespoons olive oil
  • 2 teaspoons wine vinegar
  • 2 tablespoons greek yogurt
  • salt and pepper

Recipe

  • 1 in a food processor, process everything together except yogurt and salt and pepper.
  • 2 stir in yogurt. season to taste with salt and pepper.
