Breaded Pesto Stuffed Chicken Breasts

Ingredients

  • Servings: 6
  • 6 chicken breasts
  • 4 tablespoons olive oil
  • 1/2 cup cottage cheese
  • 4 tablespoons basil pesto
  • 1 1/2 tablespoons roasted red peppers, chopped
  • 1/4 cup feta cheese
  • 1/3 cup whole wheat flour
  • 1/3 cup whole wheat bread crumbs
  • 1/3 cup parmesan cheese
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • 2 eggs
  • 3 tablespoons milk

Recipe

  • 1 pre-heat oven to 350 degrees.
  • 2 mix the filling ingredients together in a bowl with a fork.
  • 3 cut a pocket in the chicken breast. be sure not to cut all the way through the breast. keep the hole small.
  • 4 stuff approximately 2 tablespoons of filling in each breast.
  • 5 heat a cast iron skillet with 2 tablespoons of olive oil.
  • 6 brown the chicken breasts for 3 minutes on each side. remove from pan.
  • 7 beat the wet mixture in a wide bowl with a fork, until it is a uniform color. in another bowl mix the breading ingredients.
  • 8 coat the chicken with the wet mixture and then place in the breading bowl and coat with the breading mixture.
  • 9 place into cast iron pan. drizzle with olive oil and place in the hot oven. bake for 15 minutes.
  • 10 remove and cover each breast with 1 tablespoon of mozzarella cheese. return to the oven for 5 minutes.
