Chicken Marsala

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breasts
  • 1 shallot, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon flour
  • 1 cup fresh mushrooms, sliced
  • 2 cups chicken stock
  • 1 cup marsala wine
  • salt and pepper, to taste
  • 1 teaspoon butter, cold

Recipe

  • 1 sprinkle chicken with salt and pepper.
  • 2 add olive oil to pan, heat pan on medium heat.
  • 3 add chicken skin side down to pan and brown, about 2 minutes each side.
  • 4 remove chicken from pan.
  • 5 add mushrooms to pan, sprinkle with salt and pepper, saute for 5 minutes.
  • 6 add shallots and saute for 4-5 minutes.
  • 7 sprinkle mushrooms with flour and saute an additional 5 minutes.
  • 8 add wine to pan and reduce by about 1/3 to thicken sauce.
  • 9 add chicken stock, simmer to reduce to thicken sauce.
  • 10 add chicken to pan, reduce heat to low to allow for gentle simmer.
  • 11 simmer chicken 5 minutes.
  • 12 add parsley, stir to combine.
  • 13 add butter, stir to melt.
  • 14 remove from heat and serve.
