Chicken Marsala

Ingredients

- 2 boneless skinless chicken breasts
- 1 shallot, minced
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon flour
- 1 cup fresh mushrooms, sliced
- 2 cups chicken stock
- 1 cup marsala wine
- salt and pepper, to taste
- 1 teaspoon butter, cold
Recipe
- 1 sprinkle chicken with salt and pepper.
- 2 add olive oil to pan, heat pan on medium heat.
- 3 add chicken skin side down to pan and brown, about 2 minutes each side.
- 4 remove chicken from pan.
- 5 add mushrooms to pan, sprinkle with salt and pepper, saute for 5 minutes.
- 6 add shallots and saute for 4-5 minutes.
- 7 sprinkle mushrooms with flour and saute an additional 5 minutes.
- 8 add wine to pan and reduce by about 1/3 to thicken sauce.
- 9 add chicken stock, simmer to reduce to thicken sauce.
- 10 add chicken to pan, reduce heat to low to allow for gentle simmer.
- 11 simmer chicken 5 minutes.
- 12 add parsley, stir to combine.
- 13 add butter, stir to melt.
- 14 remove from heat and serve.
