Chicken Packets

Ingredients

- 1 boneless skinless chicken breast, frozen (not thick one! see note below)
- 1/4 cup diced tomatoes with garlic and oregano
- 1/8 cup onion, slivered
- 3 basil leaves, fresh, sliced
- 3 artichoke leaves, sliced
- 3 button mushrooms, sliced
- 2 tablespoons mozzarella cheese, shredded
- pepper
- italian seasoning
- 1 pinch fresh garlic
- 3 tablespoons lemon juice
Recipe
- 1 take 2 sheets of foil and stack -- then spray with pam cooking spray. arrange a chicken breast on the bottom; then add seasonings and all the other ingredients except the fresh basil and cheese! -- squeeze lemon juice over everything. wrap tightly and with a magic marker, write initials of each person's packet. heat grill to 350 degrees, and cook for about 20 mins -- check to see that meat is and juices run clear. before serving -- sprinkle fresh basil over the chicken in the packet and add the cheese -- *note: if you have larger and thicker breasts -- cook longer and check before serving. i serve this with brown rice, red pepper flakes to taste in the packet! we also have a caesar salad on the side. a really lovely summer meal!
