Caramelized Carrots

Total Time: 42 mins Preparation Time: 20 mins Cook Time: 22 mins

Ingredients

  • Servings: 8
  • 2 tablespoons olive oil
  • 2 lbs whole carrots, small-peeled and halved lengthwise
  • 1/4 teaspoon salt
  • 4 garlic cloves, thinly sliced
  • 2/3 cup whipping cream
  • 1/8 teaspoon cayenne pepper
  • snipped italian parsley

Recipe

  • 1 heat olive oil in large skillet, then add carrots, cut side down.
  • 2 sprinkle with salt and cook, covered, for 10 minutes.
  • 3 turn carrots, add garlic, cover and continue cooking for 10 minutes, or until tender and golden brown.
  • 4 remove carrots to serving plate and cover to keep warm.
  • 5 add whipping cream and cayenne pepper to the same skillet and bring to a boil.
  • 6 reduce heat and gently boil for 2 to 4 minutes, until cream is slightly thickened.
  • 7 pour over carrots and serve immediately.
