Caramelized Carrots

Ingredients

- 2 tablespoons olive oil
- 2 lbs whole carrots, small-peeled and halved lengthwise
- 1/4 teaspoon salt
- 4 garlic cloves, thinly sliced
- 2/3 cup whipping cream
- 1/8 teaspoon cayenne pepper
- snipped italian parsley
Recipe
- 1 heat olive oil in large skillet, then add carrots, cut side down.
- 2 sprinkle with salt and cook, covered, for 10 minutes.
- 3 turn carrots, add garlic, cover and continue cooking for 10 minutes, or until tender and golden brown.
- 4 remove carrots to serving plate and cover to keep warm.
- 5 add whipping cream and cayenne pepper to the same skillet and bring to a boil.
- 6 reduce heat and gently boil for 2 to 4 minutes, until cream is slightly thickened.
- 7 pour over carrots and serve immediately.
