Ari's Mediterranean Pasta

Ingredients
- Servings: 4
- 1/2 onion, chopped
- 20 kalamata olives, halved
- 3 ounces fresh spinach
- 14 1/2 ounces diced stewed italian-style tomatoes
- 12 ounces whole wheat fettuccine (pretty much the whole box, save one small serving) or 12 ounces linguine (pretty much the whole box, save one small serving)
- 3 1/2 ounces reduced-fat feta cheese, crumbled
- salt and pepper, to taste
- dried oregano, to taste
Recipe
- 1 1.) prepare pasta as instructed on the box.
- 2 2.) while pasta is cooking, saute the onions over medium heat in a large skillet. as they begin to become translucent, add kalama olives.
- 3 3.) once the onions are soft and translucent, add the can of tomatoes and simmer. add salt, pepper, and oregano to taste.
- 4 4.) when the pasta is nearly finished, add the spinach to the tomato concoction. when the spinach is about half way wilted down, remove from heat.
- 5 5.) add pasta and feta cheese and toss.
- 6 6.) enjoy!
