Ari's Mediterranean Pasta

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 onion, chopped
  • 20 kalamata olives, halved
  • 3 ounces fresh spinach
  • 14 1/2 ounces diced stewed italian-style tomatoes
  • 12 ounces whole wheat fettuccine (pretty much the whole box, save one small serving) or 12 ounces linguine (pretty much the whole box, save one small serving)
  • 3 1/2 ounces reduced-fat feta cheese, crumbled
  • salt and pepper, to taste
  • dried oregano, to taste

Recipe

  • 1 1.) prepare pasta as instructed on the box.
  • 2 2.) while pasta is cooking, saute the onions over medium heat in a large skillet. as they begin to become translucent, add kalama olives.
  • 3 3.) once the onions are soft and translucent, add the can of tomatoes and simmer. add salt, pepper, and oregano to taste.
  • 4 4.) when the pasta is nearly finished, add the spinach to the tomato concoction. when the spinach is about half way wilted down, remove from heat.
  • 5 5.) add pasta and feta cheese and toss.
  • 6 6.) enjoy!
