Chicken Cacciatore

Ingredients

  • Servings: 8
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
  • 1 onion, sliced into rings
  • 2 garlic cloves, minced
  • 1 green pepper, julienned
  • 2 tablespoons olive oil
  • 1 (15 ounce) can tomato sauce
  • 1 (14 1/2 ounce) can italian stewed tomatoes
  • 2 teaspoons garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups rice, prepared

Recipe

  • 1 in a skillet, cook the chicken, onion, garlic and green pepper in oil until chicken is lightly browned and vegetables are tender.
  • 2 add tomato sauce, stewed tomatoes and seasonings. bring to a simmer and cook, uncovered, for 5 minutes or until heated through.
  • 3 serve over rice (or pasta if desired) and top with parmesaan if desired.
